This was always one of my favorite things my mom made for dessert growing up. I love making it when we’re having a cookout or people over for dinner in the summer. You could make this as individual cookies too but I’m a fan of the presentation of the pizza style.
What You’ll Need:
For the crust:
1 batch of your favorite sugar cookie dough, chilled
For the frosting:
8z cream cheese, softened
1/2 cup sugar
1 tsp vanilla extract
For the toppings:
Fruit of your choosing (I usually use mandarin oranges, kiwi, blueberries and strawberries)
For the glaze:
3/8 cup water
1/4 cup orange juice
1/8 cup lemon juice
1/2 cup sugar
1 1/2 tbsp cornstarch
dash salt
Roll your cookie dough into a pizza shape. Bake as directed. Allow to cool.
Mix your frosting by blending cream cheese, sugar, and vanilla until creamy and well combined. Spread evenly over the cooled crust.
Top with fruit as desired.
For the glaze, combine all ingredients in a small saucepan. Bring to a boil for 1 minute, stirring constantly. Cool and pour over fruit.
Chill before serving.
