Almond Pastries

Almond pastries are one of my favorite breakfast treats!  My ideal breakfast is a pastry and a cup of coffee.  When I randomly saw almond paste when we were grocery shopping a few weeks ago, I grabbed it to try making a batch of my own.  We loved these and they’re really easy too.

Ingredients:
2 packages refrigerated crescent rolls
8 ounces tub of Mascarpone (Italian Cream Cheese)
1 egg, separated
2/3 cup sugar + 1 tbsp sugar
1 tsp pure vanilla extract
1 package Almond Paste
2 oz sliced almonds

Preheat oven to 350 degrees.
Use one package of crescent rolls and lay them out in one layer in a lightly greased pan.  Roll out almond paste into a large rectangle and place over the layer of crescent rolls.

Beat mascarpone, egg yolk, 2/3 cup sugar and 1 tsp vanilla extract until light fluffy.  Spread over almond paste.

Top with remaining can of crescent rolls.  Brush with egg white.  Sprinkle almonds and 1 tbsp sugar over the top.

Bake at 350 for 30-35 minutes or until cooked through.  When cool, sprinkle with powdered sugar if desired.

Serve chilled.
