Slow-Cooker Beef and Vegetable Stew

This hearty stew is full of flavor with rich tomato base, tons of veggies, and tender beef.

Ingredients:
2 lbs. stew meat, trimmed of fat
1/2 cup flour
salt and pepper
2 cups low-sodium V8 tomato juice
1 3/4 cup beef stock
1 can tomato sauce
1 can corn
1 can peas
1 can green beans
1 can stewed tomatoes
5-6 large carrots, peeled and chopped
8-10 small potatoes or 3 large potatoes, chopped
A few dashes hot sauce

Directions:

Toss stew meat with flour, salt and pepper in a large sealable plastic bag until coated. Brown in batches in a large pan with olive oil.

Meanwhile, mix all other ingredients in crock pot and add meat when browned. Cook on low all day!  (Once meat is cooked through, you can go down to “keep warm” setting if it’s boiling too much on low).

Best if made early in the morning or the day prior. Enjoy!

Tips:
Try Spicy V8 for a kick! Serve with corn bread or biscuits.
