Oh, the sweet, chewy goodness! I saw a raspberry version of these on Pinterest and had to try to make them. After this yummy looking picture, I’ll tell you why.
Shortly after my husband and I began dating, he took me on an amazing ski trip to Whistler-Blackcomb in British Columbia (he was born in Canada). There were so many amazing things we did on that vacation…

The one thing we ate that has stuck with me were these Blueberry Oatmeal bars that they had at the Starbucks there. I never found a U.S. Starbucks that had them after we returned. I had one every morning and they were so yummy! For 6 years, I’ve tried many recipes hoping for a duplicate version of them and nothing has come close…until now. These are just like the original!
Seriously, take a look inside these babies. Layers of goodness.
The original recipe, which you can find here, called for raspberry jam, but of course I had to substitute blueberry. I used Bonne Maman Wild Blueberry Preserves (the best) and I prefer these cold, right out of the fridge. They go great with a cup of coffee in the morning for a light breakfast and I plan on making another batch for the family we have coming in town for Thanksgiving!
